Blueberry Cupcakes with Buttercream Frosting



blueberry cupcakesI absolutely love blueberry’s and when you can mix blueberries and sweets into one scrumptious cupcake I am in heaven!! Here is s super easy recipe with a smooth creamy icing that will have you wanting more!! Try making them youself!! Let me know if they are as big of a hit with your family as they are with mine. 🙂

Blueberry Cupcakes with Buttercream Frosting

For the cupcakes:

3 1/4 cups flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup unsalted butter, room temp
4 large eggs
1 cup whole milk
2 teaspoons pure vanilla extract
1 1/2 cups fresh blueberries (plus 2 tablespoons of flour)

For the frosting:

1 cup unsalted butter, softened
3/4 cups confectioners sugar, sifted
1/4 teaspoon table salt
4 tablespoons milk or heavy cream

To make the cupcakes, preheat the oven to 325F. Line muffin tin with liners; set aside.

Using electric mixer, mix together flour, sugar, baking powder and salt.

Mix butter into your mixture until it is covered with flour.

Whip together eggs, milk, and vanilla in a medium bowl. Using your mixer, add your wet ingredients in 3 stages. Scrape the sides of the bowl, making sure that all ingredients are mixed well before adding your next ingredient. Continue to beat batter until mixture is completely mixed, do NOT overbeat.

Gently toss blueberries with 2 tablespoons of flour in a medium bowl, and then fold in blueberries into your batter.

Using a large spoon, pour batter into your cupcake liners, until 2/3 of the way full.

Bake cupcakes for 18-22 minutes, or until you can insert a toothpick, and it comes out clean.

Take cupcakes out of muffin tin, and place on cooling rack.

To make the frosting, use your mixer, on medium speed, to beat the butter for a few minutes. Add in 3 cups of powdered sugar, decreasing to the lowest speed until sugar mixes well with the butter. Place mixer on medium speed, and add your vanilla extract, salt, and 2 tablespoons of milk or cream, and continue beating for 3 minutes. If frosting is too thin, add the rest of the sugar. If the mixture is too thick, add remaining milk one tablespoon at a time.

Top with blueberries for a tasty (and pretty) addition.

  1. Hey I was following your recipe to make frosting and it says cream cheese… where is the cream cheese? I am new to this but now I have made this frosting and didnt add the cream cheese now the frosting is just plain. If you have any suggestions please let me know because I have ran out of vanilla and cant go to the store at the moment. Thanks.

    • Brittany, I am so sorry this post should have read buttercream icing and not cream cheese. I have no idea how in the world I had that on there like that. My apologies. Did they turn out ok with the icing made from above? I hope you were able to enjoy them that way. I am sorry again.
